saw dust in my cereal please?

This is the fun mess I get to live in right now. Saw dust is everywhere, screws all over the floor, saws and drills on the furniture...etc. I will be soooo glad when we are DONE!

We ended up opting for the new countertop, new sink and new dishwasher instead of just doing aesthetics and im SOOO glad we did. I think I will love it when its finished, ha I just hate living in a mess!

We had to move the electrical outlet further up the wall in one spot, so here's Joel being all cute and handy- and his dad making sure he does it right ;)



In this one you can see the new sink, countertop (kind of) and dishwasher! yay!



and on a side note I finally finished my bedroom project :)

Out with the Old, In with the New!

So I am redoing my kitchen- I was debating on whether to spend oodles of money and COMPLETELY remodel, which would include a new layout, plumbing and electrical, new cabinets, a new countertop, floor, lighting etc. OR just paint and accessorize for a FRACTION of the cost.

What to do?????


Well we finally came to the decision that while a new more functional kitchen would be nice- keeping that tax credit in the bank is a better idea :)


So here are some pictures of the OLD kitchen...I dont think the people who lived in the house before us ever cleaned a day in their life. The walls just had gross primer paint layered on them, and were caked with everything from grease to dried cheese? who knows how that happens. So here are the gross before pictures.

good thing sugar doesnt go bad



So we totally forgot to eat our frozen piece of wedding cake on our 1 year anniversary, its been sitting in Joels moms freezer and so we finally brought it home. ha ha Joel made me eat it first and I thought it was going to be disgusting and moldy but it was freaking GOOD!! ha ha these are some pics of us eating it- dont know why I felt the need to take pictures but oh well ha ha

I can cook!!

So the other night I made this recipe I found on Kraft.com and it was amazing!! It tasted like something I would eat at the Olive Garden. For the rest of the night I kept bugging Joel saying things like, "That was really good wasnt it?" or "I actually cooked something good huh?" ha ha but here is proof that I really did cook it, and I know they look like blobs of weirdness but trust me they were good, and EASY which was the best part. and im proud of myself ha ha.
here is the recipe for anyone who actually reads this?


Chicken Parmesan Bundles
Ingredients
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated
Directions
HEAT oven to 375ºF.
MIX cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
BEAT egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
BAKE 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.

I found this picture when I used to do the ward bulletin each week for sacrament meeting and I instantly fell in love with it!! I dont know what it is but I think its so cute and aside from the blonde hair like to think its Joel and I :)

Doctor Shmoctor










So I went to the doctor yesterday because of my constant tiredness. I have had this since High School and I went to the Doctor in H.S. and they said it was because I had an abnormal Thyroid. Then they said they could fix it by taking 2 pills a day for the rest of ever. So I said mmm ill think about it and never went back. (I dont like meds)

So Joel finally convinced me that taking some thyroid pills would be better than being tired all of the time- so I went and got some tests done and went to the doctor. (Big step for me)

So the FIRST Doctor I went to got back my tests and says my thyroid is Normal. What the crap? Apparently my thyroid fixed itself in the last 3 years. Then he preceeds to tell me that he thinks I have narcolepsy. Yes, thats right, NARCOLEPSY. you know where you just randomly fall asleep and cant help it? I told him I didnt think I had that because I can control whether or not I fall asleep...and he pretty much just told me he was right. So then I am referred to a sleep specialist.
So after waiting a month to get in, I go to the specialist and I must say I am a little disappointed. He diagnosed me with "Idiopathic Hypersomnia", which he said basically means "we dont know why you're so tired." Stupid. So he wants me to come in and do an overnight/whole next day sleep study. Basically I lay in bed and they watch me sleep overnight and while I take naps. Now normally this would sound like a DREAM come true. But the fact that it will cost me like $400 AFTER my insurance...yeah not loving that so much.




So according to the abov diagram- that is my plan. I am going to fix myself for FREE and actually save some money- and hopefully some pounds. Joel and I have actually kind of started this already (eating healthy and exercise and no mcdonalds for me) and I have seen a difference in how tired I am. So im thinking if I get serious about this and really start to cut out ALL the crap I eat and exercise hard, I can fix it myself :)
